Apple-Cinnamon French Toast with Maple Mascarpone

Ingredients

For the apples
2 eating apples, peeled, cored and thinly sliced
20g unsalted butter
1 tbsp light brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground cardamom
1 tsp lemon juice
1 tbsp water

For the French toast
4 thick slices brioche
2 large eggs
80ml whole milk
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
Pinch of salt
15g butter, for frying

For the maple mascarpone
100g mascarpone
1 1/2 tbsp maple syrup
1/2 tsp vanilla extract

Method

  1. Mix the mascarpone, maple syrup and vanilla until smooth. Refrigerate while you make the French toast.
  2. Melt 20g butter in a frying pan over medium heat. Add the apples, brown sugar, cinnamon, cardamom, lemon juice and water.
  3. Cook 6-8 minutes, stirring occasionally, until the apples are soft and glossy but still hold their shape.
  4. Whisk the eggs, milk, vanilla, cinnamon and salt in a shallow dish.
  5. Dip each brioche slice into the mixture for about 10 seconds on each side.
  6. Melt the remaining butter in a clean frying pan over medium-low heat. Fry 2-3 minutes per side until golden.
  7. Top with the warm apples and maple mascarpone. Finish with an extra drizzle of maple syrup.
