Baked Apple and Oat Breakfast Crumble

Ingredients

For the apples
4 eating apples, peeled, cored and diced
1 tbsp maple syrup
1 tsp ground cinnamon
1/2 tsp vanilla extract
1 tbsp lemon juice
2 tbsp water

For the oat crumble
120g rolled oats
50g plain flour
40g chopped pecans or walnuts
1/2 tsp ground cinnamon
Pinch of salt
50g cold butter, cubed
2 tbsp tahini
2 tbsp maple syrup
Greek yoghurt, to serve

Method

  1. Preheat the oven to 180C fan.
  2. Place the apples in a medium baking dish. Add the maple syrup, cinnamon, vanilla, lemon juice and water, then stir.
  3. Cover with foil and bake 10 minutes while you prepare the topping.
  4. Combine the oats, flour, nuts, cinnamon and salt. Rub in the cold butter until roughly crumbly.
  5. Add the tahini and maple syrup. Mix until clusters begin to form.
  6. Remove the foil and scatter the crumble evenly over the apples.
  7. Bake uncovered 20-25 minutes until crisp and bubbling. Rest 5 minutes, serve with Greek yoghurt.
