Apple, Mature Cheddar and Sage Toastie

Ingredients

4 thick slices sourdough
120g mature Cheddar, grated
1 small crisp eating apple
2 tsp wholegrain mustard
8 fresh sage leaves
20g softened butter
1 tsp olive oil
Black pepper

Method

  1. Core the apple and slice very thinly. Pat dry with kitchen paper so it doesn’t make the toastie soggy.
  2. Heat the olive oil in a frying pan over medium heat. Fry the sage leaves 20 seconds per side until crisp.
  3. Spread one side of every bread slice with softened butter. Spread the unbuttered sides with wholegrain mustard.
  4. Divide half the Cheddar between two slices. Add a single overlapping layer of apple, black pepper and crisp sage.
  5. Cover with remaining Cheddar and close the sandwiches, buttered sides on the outside.
  6. Cook in a frying pan over medium-low heat 4-5 minutes per side, pressing gently, until crisp and golden.
  7. Rest 1 minute before cutting in half. Serve while hot.
