Cheddar, Apple and Sage Sausage Rolls

Ingredients

400g good-quality pork sausage meat
1 small eating apple, coarsely grated
80g mature Cheddar, grated
1 tbsp wholegrain mustard
1 tbsp fresh sage, finely chopped
1 x 320g sheet ready-rolled puff pastry
1 egg, beaten
1 tsp sesame seeds
Black pepper

Method

  1. Preheat the oven to 200C fan and line a baking tray. Squeeze the grated apple in a clean tea towel to remove excess juice.
  2. Mix the sausage meat, apple, Cheddar, wholegrain mustard, sage and a generous grind of pepper.
  3. Unroll the pastry and cut lengthways into two equal strips. Shape half the filling into a log down the centre of each.
  4. Brush one long edge of each strip with beaten egg. Roll the pastry around the filling and place seam-side down.
  5. Cut each log into six pieces. Arrange on the tray, brush with egg and scatter with sesame seeds.
  6. Bake 25-30 minutes until puffed, deeply golden and cooked through.
  7. Cool at least 10 minutes before serving. Also excellent at room temperature.
