Pumpkin-Spice Granola Clusters

Makes 1 large jar · Easy · 40 minutes

Ingredients

300g jumbo rolled oats
100g pecans, roughly chopped
60g pumpkin seeds
100g pumpkin puree
80ml maple syrup
40g coconut oil, melted
1 tsp ground cinnamon
1/2 tsp ground ginger
Finely grated zest of 1 orange
1/2 tsp fine sea salt
80g dried cranberries

Method

  1. Preheat the oven to 160C fan and line a large baking tray.
  2. Mix the oats, pecans and pumpkin seeds in a large bowl.
  3. Whisk the pumpkin puree, maple syrup, coconut oil, cinnamon, ginger, orange zest and salt until smooth.
  4. Pour over the dry ingredients and stir until evenly coated. Press into a thin, compact layer on the tray.
  5. Bake 30-35 minutes. Turn the tray halfway through, but don’t stir if you want large clusters.
  6. Cool completely on the tray, then break into rough pieces and fold through the dried cranberries.
  7. Store in an airtight jar for up to two weeks.
