Preheat the oven to 190C fan and line a large baking tray.
Mix the feta, figs, walnuts, oregano and black pepper. Stir the honey and fresh thyme together separately.
Lay one filo sheet on the worktop and brush with butter. Top with a second sheet, brush again, add a third. Repeat for a second stack.
Cut each stack into five long strips. Spoon filling along each strip, leaving a narrow border.
Fold each strip over the filling lengthways, press lightly to enclose, then twist three or four times.
Bake 18-22 minutes until crisp and deep golden.
Drizzle lightly with thyme honey while warm and serve the same day.
