5 eating apples, peeled and thinly sliced 60g light brown sugar 1 1/2 tsp ground cinnamon
1 tbsp lemon juice Finely grated zest of 1 orange 80g walnuts, toasted and chopped 8 sheets filo pastry
80g butter, melted 100g runny honey Juice of 1/2 orange Greek yoghurt, to serve
Method
Preheat the oven to 190C fan and butter a 24cm round baking dish.
Toss the apples with the brown sugar, cinnamon, lemon juice, orange zest and walnuts.
Lay out one filo sheet, brush lightly with melted butter and place another sheet on top. Spoon one-quarter of the filling along a long edge.
Roll into a loose log, then coil it into the centre of the dish. Repeat with the remaining filo and filling, wrapping each log around the last.
Brush the top with the remaining butter. Bake 30-35 minutes until crisp and deeply golden.
Warm the honey and orange juice together for 1 minute. Spoon over the hot byrek.
Rest 15 minutes, then cut into wedges and serve with Greek yoghurt.
