Maple and Cinnamon Roasted Nuts

Ingredients

400g unsalted mixed nuts
1 large egg white
3 tbsp maple syrup
1 tbsp melted butter
1 tsp ground cinnamon
1/4 tsp smoked paprika
Small pinch of cayenne pepper
1/2 tsp fine sea salt
Flaky salt, to finish

Method

  1. Preheat the oven to 160C fan and line a large baking tray.
  2. Whisk the egg white until frothy but not stiff. Whisk in the maple syrup, melted butter, cinnamon, smoked paprika, cayenne and fine salt.
  3. Add the nuts and toss until every piece is lightly coated.
  4. Spread the nuts in a single layer on the tray. Roast 20-25 minutes, stirring well halfway through.
  5. Remove from the oven when the coating is dry and the nuts smell toasted.
  6. Sprinkle with flaky salt and cool completely on the tray; they crisp up as they cool.
  7. Break apart and store in an airtight jar for up to one week.
