8 sheets filo pastry 70g butter, melted 2 roasted red peppers from a jar, well drained
180g feta, crumbled 1 large egg 2 spring onions, finely sliced 1/2 tsp dried mint
1/2 tsp dried oregano Black pepper Sesame seeds, to finish
Method
Preheat the oven to 190C fan and line two baking trays. Pat the roasted peppers very dry and chop finely.
Mix the peppers with the feta, egg, spring onions, dried mint, oregano and black pepper.
Cut the filo sheets lengthways into three strips and keep covered with a damp tea towel.
Brush one strip lightly with butter. Place a spoonful of filling near one end, then fold one corner diagonally over it to form a triangle.
Continue folding the triangle along the strip until enclosed. Repeat to make 12 bites.
Arrange on the trays, brush with butter and sprinkle with sesame seeds. Bake 20-25 minutes until crisp and golden.
Cool 5-10 minutes before serving so the filling can settle.
